Vermicelli( Semai) Recipe from Bangladesh cuisine

Vermicelli( Semai) is most important dish in Bengali Eid festival.

Here is some recipe of this.

1. Nababi Jarda Semai(Vermicelli)


Materials :

Vermicelli 200 grams
Milk  4 liters
4 table spoons of nuts paste
Sugar to taste
6 pieces of cinnamon
6 Cardamom
Ghee half cup
2 tablespoons of rose water
Saffron semi-teaspoon
2 tablespoons of raisins
Pistachios chopped 3 table spoons for garnishing

Method

Saffron must be kept with 1 table spoon of rosewater.

Milk should be kept in the oven for a few more times by mixing it with the mixture of nuts. Heat the ghee and fry for a long time. Then pour milk on it. When it is blossom, add sugar, cardamom, cinnamon, and 1 tablespoon of rosewater to taste.

After 10 to 12 minutes, the mixture of rosewater and it will be kept on . Then sprinkle the dish and add  the pistachios chopped and serve it.

2. Laccha Semai

Materials :

Lachcha Semai (vermicelli) 1 packet
Cold milk 1 kg
Sugar to taste
Raisins, nuts, dates (any draw fruit) for garnishing

Prepare

Take thick milk(cooked).  Mix the sugar. Keep the bowl and draw fruits in the bowl and keep them add  in the hot milk  for 1/2 hours. Keep it refrigerated if cold. Now served.

3. Milk with egg Vermicelli

Materials

Vermicelli 250 g (Normal)
Milk 2 liters
3 pieces of cardamom
Cinnamon
1 table spoon of nuts
1 tablespoon of raisins
Two eggs
Sugar 2 cups (quantity)

Prepare:

Take vermicelli and fry it light brown . Cook  the milk on medium flame and makes it 1.5 liters. Mix eggs with  milk and stirring continuously. Now add frying vermicelli, sugar, cardamom and cinnamon. Cook  for 5 minutes. Now spread the nutmeg and raisins in the serving containers. Serve cold and refrigerate.

4. Vermicelli Mojafer

Materials :

Vermicelli 100 grams

100 grams of butter
6-7 cardamom
Sugar 1 cup or taste
Water 3-4 cups
2 cups of powder milk (half a cup of water)
1 tablespoon of lemon juice
Saffron color is slightly
Raisins, nuts and mawa as needed

Method:

First butter will be melted, and put it cardamom. Then vermicelli will be fried lightly brown.

Now take 3-4 cups water and 1 cup sugar in a pan and heat well. Then add saffron. Add the mixture on vermicelli and stirring. When it will be dried then add milk and after that add lemon juice.

Now stirring for some time and keep on pressure for 20-25 minutes.

After that it will be neat.

To serve a serving dish  with nuts, raisins and mawa.

5. Vermicelli Kheer

Materials :

1/2 liter of milk
1/3 cup frying Semai/ vermicelli
1/2 cup sugar
1and 1/2 tablespoon ghee
Chestnut chopped
1/2 teaspoon of cinnamon powder
1 tablespoon raisins

Method:

1. First, heat ghee in a pan.

2. Add vermicelli and fring for 7-8 minutes.

3. Now add milk and cook for  7-8 minutes. Keep until milk becomes thick.

4. Then add sugar and  cook it for 5-6 minutes.

5. Mix well with raisins, nuts and cinnamon powder. And serve it.
