Healthy Vegetable Eggplant


Eggplant is the common name in North America and Australia but British English uses aubergine. It is alson known as Brinjal in South Asia,Southeast Asia and South Africa. The fruit is widely used in cooking. It flower is white to purple ,with a five-loved corolla and yellow stamens. It has different size , shape and colour though typically purple.


Nutritionally, raw eggplant is low in fat, protein, dietary fiber and carbohydrates but eggplant also contains important phytonutrients. Eggplant is a very good source of dietary fiber, vitamin B1 and copper and  It is also  good source of manganese, vitamin B6,niacin,potassium.
