Nutrition of Cucumber
Cucumber is a popular vegetables in the world. It is a widely cultivated plant in the gourd family Cucurbitaceae. Cucumbers are scientifically known as Cucumis sativus. The cucumbers is originally from South Asia but now grows on most continents.
Cucumber has three main varieties of cucumber, there are slicing, pickling and seedless. The cucumber is a creeping vine that roots in the ground and grows up trellises or other supporting frames,wrapping around supports with thin,spiraling tendrish.
The plant may also root in a soilless medium and will sprawl along the ground if it does not have supports. The vine has large leaves that form a canopy over the fruits.
The fruit of typical cultivars of cucumber is roughly cylindrical but Leon with tapered ends and may be as large as 24 inch long and 3.9 inch in diameter.
Slicing cucumbers mature on vines with large leaves that provide shading. Slicers grown commercially for the North American market are generally longer,smoother, more uniform in color and have a much tough skin.
Pickled cucumbers grow to about 7cm to 10cm long and 2.5cm wide. Compared to slicers,picklers tend to be shorter, thicker less regularly shaped and have bumpy skin with tiny white or black-dotted spines. Pickled cucumbers are never waxed. Color are very from creamy yellow to pale or dark green .
Burpless cucumbers are sweeter and have a thinner skin than other varieties of cucumber and are reputed to be easy to digest and to have a pleasant taste. Burpless cucumbers can grow as long as 2 feet. They are nearly seedless and have a delicate skin.
Cucumbers are a valuable source of conventional antioxida nutrients including Vitamin C,beta-caroten and manganese.
In addition cucumbers contain numerous flavonoid, antioxidants including quercetin, apigenin, luteolin and kaempferol. Research on the anticancer benefits of cucumber is still in its preliminary stage and has been restricted thus far tto lab and animal studies.
However many pharmaceutical companies are actively studying one group of compounds found in cucumber called cucurbitacins in the hope that their research many lead to development of new anti-cancer drugs.
A second group of cucumber phytonutrients known to provide anticancer benefits are its ligand. Cucumbers are an excellent source of Vitamin K and molybdenum. They are also a very good source of the pantothenic acid and a good source of copper,potassium, manganese, vitamin C,phosphorus, magnesium, biotin and vitamin B1.
