Thai chicken fried rice: Traditional Thai recipe

Thai chicken fried rice, locally known as Khao phat kai. It’s one of the traditional dishes in Thailand.

Thai cuisine used various types of fried rice such as pork fried rice, chicken fried rice, shrimp fried rice, egg fried rice, vegetarian fried rice, crab fried rice.

Here’s some Thai chicken fried rice recipe collection from Thai cuisine.

 

1. Thai chicken fried rice

Ingredients:

2 eggs

Peanut oil   2 tabspoon

4  Lime leaves (thinly sliced)

1/2 Brown onion (thinly sliced)

1 Red Capsicum  (thinly sliced)

150g green beans (cut into 3cm lengths)

Valcom Thai Red Curry Paste  2 tabspoon

Soy sauce    2 tabspoon

Fish sauce   2 tabspoon

Lemon juice  1 tabspoon

Cooked jasmine rice (cold) 6 cups

Chicken (shredded & cooked) 3 cups

Coriander leaves chopped (fresh)  1/2 cup

Shallots ( fried) 2 tabspoon

Lemon for garnishing

Method:

Beaten the  eggs with  2 tabspoons of  cold water in a bowl until combined. Season with salt and pepper.

Heat 2 tabspoon of oil in a pan and add egg. Swirl to cover base of pan  and form a thin round omelette. Cook for 2 minutes or until egg and keep aside for 5 minutes. Roll up omelette tightly and then thinly slice.

If needed,  increase heat to mediumhigh. Add remaining oil to pan. Swirl to coat. Stir-fry lime leaves for 30 seconds or until crisp.

Using a slotted spoon, transfer leaves to a plate lined with paper.

Return pan  to heat. Stir-fry onion for 2-3 minutes or until golden. Now add the capsicum and beans and fry for 2 minutes. Add curry paste and fry again for 1 minute.  Add combined sauces and lime juice to the pan.

Now add rice and chicken and fry until heated through. Add coriander and egg and mix well. Take  rice into a large serving plate. Sprinkle with fried shallots and lime leaves.

Serve with lemon wedges.

2. Thai chicken fried rice with basil

Ingredients:

Vegetable oil 2 tabspoons

Garlic    3 cloves (minced)

Fresh Thai red chili pepper chopped 1 tabspoon

Chicken breasts (boneless & skinless) 8 ounces (cut into bite-size)

Cooked rice (cold)  2 cups

 Sugar  1 tabspoon

Fish sauce  1 tabspoon

Soy sauce  1 tabspoon

Shallots chopped 2 tabspoons

Thai holy basil (regular basil )  1/3 cup

Fresh cilantro chopped 1 tabspoon

Method:

Heat oil in a pan and stir-fry   until golden. Then add chilies and chicken and stir-fry until chicken is cooked.

Now add rice, sugar, fish sauce, and soy sauce and mix well and stir-fry. When it will be well mixed then add shallots, basil leaves and cilantro and cook another 1-2  minutes or so.

Now  serve with lime wedges, chile sauce, fish sauce, or soy sauce at the table.
