Polao recipe collection from Bengali cuisine

Polao recipe collection from Bengali cuisine  and makes your kitchen. Polao recipe makes some ingredients such as you can use various types of vegetables, fruits or meat.

Basically Polao is a one type of dish in which rice is  cooked in a seasone broth . In some cases, the rice may attain its brown or golden color by first being sauteed lightly in oil before the addition of broth.

Here’s some Polao recipe from Bengali cuisine.

1. Motor Polao

Ingredients:

Peas ½ cup
Polao rice/ Basmati rice 4 cups
Ghee 1/2 cup
2 Cinnamon 2cm
4 Cardamom
Ginger paste 1 teaspoon
Salt to taste
7 cups of water (boiled)
Yogurt (optional) 1/4 cup

Method:

Heat ghee in a pan and give ginger, cinnamon and cardamom and stirring. Then add boiled water.

When the water starts to blooms then add rice and salt. Stirring occasionally.
When it will be blooms again then add peas and yogurt. Cover it.

Cooking for 20-22 minutes. Then remove from the oven.
Then serve with Chicken,Beef or Mutton.

2. Vegetable polao

Ingredients:

1 cup of Basmati rice 1 cup
Salt to taste
Ghee 5 tabspoons
Peas 1/2 cup
Carrots (grated) 1 cup
12 Raisins
10 Cashew nuts
10 Amand nut
Beans chopped 1/2 cup
4 Cardamom
1 Cinnamon (1½ inch)
1 Bay leaf
4 Cloves
Cumin seeds 1 teaspoon
Water 1½ cup

Method:

Heat 2 spoons of ghee in a pan and add peas, carrots, beans ,salt and stirring for 3 minutes. Keep aside this.

Again 1 teaspoon of ghee heat in this pan and add cashew nuts,a almond nuts and raisins and fry for 2 minutes and then keep aside.
After that, add 2 spoons of ghee and add cumin seeds, cinnamon, cloves, black pepper and basmati rice and mix well. It will be cooked for 3 minutes.

Now add fried peas, carrots and beans. Add water in this.
Cook on low medium flame.
After 10 – 12 minutes, add cashew nuts, raisins, and almond nuts and keep for 15 minutes.
After that remove from heat and serve.

3. Fruit polao

Ingredients:

Polao rice 300 g
Raisin 50 grams
Apple pieces 100 gm
Cashew nuts 100 g
Pineapple pieces 100 gms
Salt to taste
Sugar to taste
Ghee 50 grams
Maowa 50 grams
Oil 100 grams
Little amount of hot spices masala

Method:

Wash the rice and boil it.
Heat oil and ghee in together in a pan and add the hot spices masala.
After that add raisins, apples, pineapple, cashew nuts and stir it sometime. Then add salt, sugar, maowa and boiled rice and mix it well.
Then remove from heat and serve .

4. Chicken Kima Polao

Ingredients:

Polao rice 2 and ½ cups ( soak for half an hour).

Coriander leaves chopped 3 tabspoons

Mint leaves chopped 3 tabspoons

Salt to taste

Chicken (minced) 1 cup

2 Cardamom

2 Cloves

Cumin seeds  ½ teaspoon

Onion chopped  ½ cup
Tomato chopped 1 cup
5 Green chilli
Ginger paste 1 teaspoon
Garlic paste 1 teaspoon
Chilli powder 1 teaspoon
Hot Spices masala powder  ½ teaspoon

Cinnamon 2-3

Black pepper 8-10

 

Method:

Oil must be heated with cardamom, cloves, cinnamon, black pepper and cumin seeds.
Then add onion chopped and fry it.

Now add chicken minced and cook for sometime. Then add salt, ginger paste, garlic paste, chilli powder, and tomatoes and stirring.

When the chicken minced will be boiled then add the rice . Add some hot water and cook until rice boiled then remove from heat.
Now add coriander leaves chopped, mint leaves chopped, green chilli and keep sometime for vapor.

After that serve it.

5. Chicken Polao

Ingredients:

Polao rice 500 gm
Chicken meat 1 and 1/2 kg
Lentils ½ cup
Onion chopped 1 cup
Onion paste 2 table spoons
Ginger paste 2 teaspoons
Garlic paste 1 table spoon
Hot spice masala 1 teaspoon
2-3 Bay leaves
Yogurt 2 table spoons
2 Prunes
Cinnamon, cardamom, cloves, nutmeg, joytree] 1 teaspoon
Salt to taste
Ghee 2 table spoons
Soybean oil ½ cup
Sugar 1 teaspoon
Black pepper powder ½ teaspoon
2-3 Green chilli
Onion chopped (fried) 1 cup
Cumin paste 1 teaspoon
Turmeric powder ⅓ teaspoon
Chili powder ½ teaspoon
Coriander powder 1 teaspoon
Water 4 cups

Method:

Makes the Chicken 12-14 pieces and wash well and keep aside. When the water comes out and add Onion paste, ginger paste, garlic paste, sugar, cinnamon, cardamom, joytree paste, chilli powder, salt, cumin paste, turmeric powder, coriander powder, black pepper powder, yogurt and prunes. Marinated the Chicken and keep aside for one hour.

Wash the polao rice and lentils and keep aside for water drop out.
Then mix rice and lentils together.

Heat ghee and oil in a pan and add Onion chopped and fri it until brown. Keep aside some of this.
Add the hot spices masala and bay leaves. After that add the marinated chicken. Cook for few minutes.

When the meat will be boiled then the chicken remove from pan and keep aside. Now add the rice and lentils and stirring continuously. After sometime add some water and add salt to taste.

Cook on low medium heat.
When it will be dry then add chicken. Stop the heat and serve with various types of salad.
