Mutton recipe collection from Bengali cuisine. 1. Mutton Shahi Rezala

Materials :

Mutton 1 kg

Yogurt 1 cup

Onion paste ½ cup

Garlic paste 1 teaspoon
Ginger paste 1 teaspoon

Sugar to taste
Salt to taste

Poppy seeds paste 2 teaspoon
Black pepper powder ¼ teaspoon
Cinnamon 5-6

Prunes 6-7

2-3 Cinnamon
3-4 Cardamom
Milk 1 cup
Ghee ½ cup
Rose water 2 teaspoon
Saffron ½ tea spoon
Raisins paste ½ teaspoon


Wash the mutton and mix with all the spices and keep aside for 2 hours.
Now heat the oil in a pan and add onion chopped and hot spicy masala ingredients (Cardamom,cinnamon, cloves).
Now add the marinated mutton.

After sometime, add the black pepper and milk. Cook on low flame.
If the mutton will be boiled then add sugar and green chilli. Cover it and keep it on low medium heat.
Before serving, sprinkle the fried onion chopped.

Now ready to serve the Mutton Shahi Rezala.


2. Mutton White Korma

Mutton 500 g
Yogurt 200 grams
Onion paste 4 tabspoon
Garlic paste 1 tablespoon
4-5 Cinnamon
5-6 Cardamom
4-5 Cloves
Bay leaves 2-3
Salt to taste
Sugar 1 teaspoon
Ghee 100 g


Mix all ingredients with the mutton and keep for 5-6 hours for marinating.
Take ghee in a pan and add the marinated mutton and cover it.

Now cook on medium heat. When it will be boiled and oily then remove from heat and the Mutton White Korma is now ready to serve.


3. Mutton Korma

Mutton 1 kg
Ginger paste 1 tablespoon
2-3 Cinnamon
2 Bay leaves
Salt to taste
Ghee ½ cup
7-8 Green chilli
Kewora water 2 tablespoons
Milk (liquid) 2 tablespoons
Onion paste ¼ ups
Garlic paste 2 teaspoons
2-3 Cardamom
Yogurt ½ cup
Sugar 4 teaspoon
Onion chopped ½ cup
Lemon juice 1 tablespoon
Saffron ½ teaspoon(mix with 2 tablespoons of liquid milk)


Wash the mutton and keep aside.
Add ginger paste, garlic paste,onion paste,cardamom, cinnamon,cloves, yogurt, ghee and salt mix well.

Now put it on oven on medium heat. If needed then add some hot water.
When it will be boiled then add keowra water and green chilli and stirring.
Cook about 15-20 minutes.

Now heat ghee in another pan and fry the onion chopped and then the fried onion chopped mix on this mutton.
Add sugar and stirring occasionally.

After 5-6 minutes add saffron mixture from milk. Cook again for 4-5 minutes.
Now add lemon juice and keep it on low flame for 10-12 minutes.

Now ready Mutton Korma.


4. Mango Mutton


Mutton 1 kg
7 Onion chopped
16-17 Black pepper
Curry leaves 3-4
Ginger chopped 4 tabspoon
Garlic 14 Pieces
Turmeric powder 1 teaspoon
Green chilli 6-8
Salt to taste
Cornflower 1 teaspoon
Green mango chutney a pinch


Wash and clean the mutton and cut it into small pieces.

Heat oil in a pan and add black pepper.

Now add ginger, garlic and onion. When it will be brown then add curry leaves and turmeric powder.

Now add mutton and salt and keep stirring.

When the mutton will be boiled then add green mango chutney.

If you want thick gravy then add cornflower. Then remove from heat.

Serve hot with bread.


5. Mutton roast

Materials :

Mutton   1 kg (cut into big pieces)
Onion chopped   2 tablespoons
Onion paste   2 tablespoons
Onion chopped (fried) 1 cup
Ginger paste  1 teaspoon
Garlic paste  1 teaspoon
Chili powder  1 tablespoon
Cumin paste  1 teaspoon
2-3 Cinnamon
Cardamom 3-4
Clove 2-3
5-6 Black pepper and  4-5  bay leaves
Dry chilli 5-6
Yogurt ½ cup
Sugar 1 teaspoon
Nutmeg, Joytree and Poppy seeds paste 2 tablespoons
Milk 1 and ½ cup
Caraway water 1 tablespoon
Tamarind chutney 1 tabspoon
Ghee 2 tabspoon
Oil ½ cup
Sugar 1 tablespoon
Salt to taste


At first, makes hole with a spoon and marinate for 1 hour with onion, garlic, cinnamon, cumin, cardamom and black cloves, dried chili, black pepper, salt, yogurt, sugar and oil.

Now boil the mutton.

Now add all ingredients except fried onion chopped,ghee and tamarind. Stirring occasionally.

When it will be thick and oily then add ghee and fried onion chopped.

Now remove from heat and serve with roti, rice.


6. Mutton Kaliya

Ingredients :

Mutton 2 kg
Ginger paste 2 tabspoon
Garlic paste 1 tabspoon
Salt to taste
Oil 1 cup
Chili powder 2 tabspoon
Turmeric powder 1 teaspoon
Onion chopped 2 cups
Onion paste 2 cups
Yogurt ½ cup
Tomato paste ¼ cup
Cumin paste 1 teaspoon
5-6 Cardamom
Cinnamon 2 pieces
7-8 Green chilli


At first ginger paste, garlic paste and salt mix with mutton and keep aside for 5 hours.

Heat oil in a pan and add onion chopped. Now fry this until brown.

Then add marinated mutton and mix well. Now add all masala ingredients. Cook for about 30 minutes.
If needed then add a little amount of hot water.


When it will boiled and thick then add green chili and then remove from heat.
Now it serve with roti, rice or polao.


7. Sour & Spicy Mutton


Mutton 1 kg
5 Onion (cut into 4 pieces)
Garlic paste 1 tablespoon
Ginger paste 1 and ½ tablespoon
Cumin paste 1 tablespoon
Coriander powder 1 tabspoon
Turmeric powder ½ teaspoon
Chilli powder 2 teaspoons
Hot spices masala (Cardamom, cinnamon, cloves) powder 2 teaspoon
2 Bay leaves
Oil as needed
Mango chutney 2 tabspoon
Salt to taste


Wash the meat and keep aside for water drop out.
Now mix all ingredients and keep sometime for marinating.

Now heat oil in a pan and add the marinated mutton. Keep stirring.

If needed then add 1 cup of hot water. Cook on medium heat.
When it will be boiled and thick then remove from heat.

Serve with rice , roti or Polao.


8. Coconut Mutton


Mutton 1 kg
Oil ½ cup
Onion paste ½ cup
Onion chopped (fried) ½ cup
3-4 Green chili chopped
Ginger paste 1 teaspoon
Garlic paste 1 teaspoon
Cumin paste 1 teaspoon
4-5 Cardamom
Cinnamon  3-4 pieces
Coconut milk 1 cup
Black pepper powder ½ teaspoon
Chili powder 1 teaspoon
Cream as your choice


At first salt mix the mutton and fry until golden, then keep aside.

Heat oil in a pan and add cardamom and cinnamon. Then add onion paste and garlic paste. Stirring 2-3 minutes.

Now add fried onion chopped and all masala ingredients and mix well.
Then add coconut milk and mix well. After that add fried mutton. If needed then add a little amount of hot water. Cook on medium flame.

When it will boiled and thick then remove from heat.

Add cream for garnishing.

Serve hot with rice, roti or as your choice.
