Khichuri recipe collection from Bengali cuisine. Khichuri is local name of this dishes. It is one of the most popular dishes in here. Basically Bengali cuisine used many types of meat,vegetables, fish or dal in this.

 The rice is commonly cooked and served on rainy days. It is a staple for holy ceremonies and as an offering to Gods.

Cooks and homemakers often prepare this dish with many ingredients mixed with.

Rice and lentils are simmered till mushy, seasoned with turmeric and salt, and fed to infants to introduce them to “adult” food. The elderly and sick, especially those having stomach problems, are served with the rice as it is easily digestible compared to other dishes which involve more meat and spices.

Here’s some Khichuri recipe collection from Bengali cuisine.

 

1. Mixed vegetables and meat Khichuri

Mixed Vegetables and meat Khichuri

Ingredients:

Basmati rice 2 cups
4-5 Green chilli
Papaya-carrots-cowpea vegetables chopped  (2 cups)
2 Cardamom
2 Cinnamon
Ginger paste 1 teaspoon
Ghee 2 tablespoons
Garlic paste ½ teaspoon
Oil 1 tablespoon
Nut paste 1 teaspoon
2 Chicken cube
Salt to taste
3 cups of water

Method:

Wash the rice and soak for 20 minutes. Put the vegetables into small pieces.
Heat oil and fry the onion chopped until brown. Now add all ingredients and stirring about 3- 4 minutes.
Now add water. Cover it and Cook until dry.
Now add green chilli slices.
Remove from heat and serve with sauce, chutney or vegetables.

 

2. Mixed Chicken Khichuri

Mixed Chicken Khichuri

 

Materials :

Rice 2 cups
Carrots ¼ cup
Potatoes ¼ cup
Mung bean ½ cup
Butter oil ¼ cup
Oil ¼ cup
Ginger paste 2 teaspoons
Yellow Cowpea 1/2 teaspoon
Garlic paste 1 teaspoon
Salt to taste
Chicken 2 cups
Cardamom 4-5
7-8 Green chillies

Method:

Wash well the pulse and rice and keep aside for water drop out.

Heat oil in a pan and add onion chopped, green chilli, ginger paste, garlic paste, turmeric powder,cloves and cardamom and mix well. Add 4 tablespoons of water.

Cook the chicken on this masala. Add the rice, pulses, vegetables and hot water. Cook 15-20 minutes.Then serve hot.

3. Beef Khichuri

Beef Khichuri

Ingredients:

Beef 500 gm
Ginger paste 1 tabspoon
Rice 2 cups
Garlic paste 1 teaspoon
Mung pulse ½ cup
Lentil pulse ½cup
Onion paste 1 tabspoon
Coriander seeds paste 1 teaspoon
2 Cardamom
Water 6 cups
Cinnamon 2-3
Cloves 2-3
Salt to taste

Method:

Wash the rice and pulses and keep it for half an hour for water drop out.
Mix all other ingredients (except oil) with beef.
Heat the oil in a pan and add the marinated beef. Cook for about 15-20 minutes, then add 1 cup of water and wait until boiled.

Now take out the beef from spices and keep aside.
Now add rice and pulses on this spices and should be covered with 6 cups of water.
When drain the water and then add green chilli slices and cooked beef.
Now serve with salad and chutney.
