Rui Fish: Some Bangladeshi Recipe

Rui or Ruhi is one of the favorite food fish in the whole world. Every country has own cooking tradition. Here is some Bangladeshi/Bengali recipe.

★ Rui Patori

PC: Shuchismita Ghos

Ingredients

Rui fish 400 gm (cube)

Garlic paste 2 tabspoon

Chili powder 2 teaspoon

Salt to taste

Oil 1/2 cup

2 Onion chopped

Lemon leaf 3-4

Water 1/2 cup

Method

Fish washed in well and mix all ingredients except lemon leaf in a pan and keep it about 30 minutes. After that that pan put on a stove and cook on low heat.

After 15-20 minutes it will be ready for  adding lemon leaf and cook on low heat .

Then it ready for serve.

★ Rui Korma

Ingredients

Rui fish 7-8 pieces

Turmeric powder 1/2 teaspoon

Salt to taste

Yogurt 1 cup

Raisins paste 2 teaspoon

Onion paste 2 tabspoon

Ginger paste 1 teaspoon

Cumin powder 1 teaspoon

Oil 4 tabspoon

Cream 100 gm

Ghee 2/3 teaspoon

Masala( cardamom, cinnamon, cloves) powder 1 teaspoon

Sugar 1 teaspoon

Anise paste 1 tabspoon

Red chili powder 1 teaspoon

Method

Yogurt will be well blend.

At first mix salt and turmeric powder with fish and fry in a pan. Heat oil in a pan and add all ingredients in this pan except cream, ghee & masala.

 Add yogurt in that pan.After few minutes add fry fish. Add 1 cup water and masala.Cook on medium heat, when it will be dry then remove from heat.Add ghee ,cream for garnishing.

Now it ready.

★ Rui Kalia

Ingredients

8-10 pieces of Rui fish

Yogurt 1 tabspoon

Cumin powder 1/2 teaspoon

Dry chili powder 1/2 teaspoon

Turmeric powder 1 teaspoon

Ginger paste 1/4 teaspoon

Onion paste 1 tabspoon

Masala powder (cardamom, cinnamon,cloves) 1/4 teaspoon

Ghee 1/2 teaspoon

Oil 4 tabspoon

Salt to taste

3-4 Green chili

Method

First fish washed in well. Add salt and turmeric powder and keep 10 minutes for marinating.

Heat oil in a pan and fry fish until it brown.

Heat oil in an another pan. Add all ingredients except yogurt and masala powder. Cook it until thick. Add 1 cup water and cook 1-2 minutes.

Now add fried fish and green chili.Add masala powder. When it will be thick then remove from heat and add the for garnishing.

★ Rui with ginger

Ingredients

Rui fish 8-10 pieces

Onion chopped 1 cup

Ginger juice 2 tabspoon

Turmeric powder 1 teaspoon

Chili powder 1/2 teaspoon

Coriander powder 1/2 teaspoon

Green chili 5-6 pieces

Coriander leaves 2 tabspoon

Salt to taste

Method

At first fish well washed and mix turmeric powder, chili powder and salt and keep it for few minutes.

Heat oil in a pan and fry it until brown. Add half  onion and fry .

Now add all ingredients and fry it until thick. Then add fried fish and 1 cup water. Cook for 15-20 minutes on medium heat. When see it will be thick add green chili. After 1-2 minutes remove from heat.

Now it ready.

★ Doi korma Rui

Ingredients

8-10 pieces Rui fish

Onion chopped 1 cup

Green chili 3-4 pieces

Garlic chopped 5-6 pieces

Yogurt 250 gm

Ghee 2 tabspoon

Salt to taste

Sugar a little bit

Method

Yogurt blend well by hand or spoon.

At first add salt,sugar, green chili and yogurt mix with fish and keep it 20-25 minutes.

Put ghee in a pan and add onion chopped and fry until it brown. Add marinated fish and cover it. Cook for 20 minutes. When it will be thick then remove from heat.

Serve with Polao and rice.

★ Rui Rejhala

Ingredients

Rui fish 8 pieces

Yogurt 1 cup

Onion paste 1 cup

Ginger paste 1 teaspoon

6 Cloves

3 Cinnamon

Bay leaf 2

4-5 Dry chili

6 Bell pepper

2 Onion chopped

Salt to taste

Sugar to taste

Ghee & Soyabeen oil (mix ) 4 tabspoon

Method

Heat oil in a pan and fish will be  fried until it brown.

Yogurt will be blend and mix onion paste, ginger paste and green chili.

Add fry fish on this and keep it about 40 minutes.

Heat ghee in a pan and add cloves, cinnamon, bay leaf and dry chili. After few second add bell pepper and onion chopped and fry it until brown.

Now fish remove from yogurt and that yogurt mix on that. Cook it about 4-5 minutes.Add sugar and hot water (optional). Cook it until thick and then remove from heat.

★ Rui Rohini

Ingredients

Fish 6-7 pieces

Coconut milk 2 cup

Cumin paste 1 teaspoon

Coriander powder 2 teaspoon

Turmeric powder 1/2 teaspoon

Chili powder 1 teaspoon

Ginger paste 1/2 teaspoon

Garlic paste 1/2 teaspoon

4 Bay leaf

Cinnamon 2 pieces

Oil 1 cup

Ghee 1 tabspoon

Salt to taste

Method

Heat a little oil in a pan.

Mix salt, turmeric, garlic paste, ginger paste with fish and it will be fried. Now add bay leaf ,coriander, cumin, chili with water in a bowl and add this.Now add coconut oil.Cook it until thick. Then remove from heat and add ghee.

Now it will be ready.

★ Rui Sahi Korma

Ingredients

Fish 5-6 pieces

Ginger paste 1 tabspoon

Garlic paste 1 teaspoon

Onion paste 1 tabspoon

Yogurt 2 tabspoon

Green chili paste 1/2 teaspoon

Onion chopped 1 tabspoon

Masala mix powder ( cardamom, cinnamon, cloves, bay leaf) 1 teaspoon

1 Bay leaf

Almond paste 1 teaspoon

Raisins paste 1 teaspoon

Milk 1 cup

Ghee & Soya oil mix 2 tabspoon

Black cumin a little bit

Salt to taste

Water 1 cup

Method

After wash the fish ,mix with salt, ginger paste and garlic paste and fry it until brown.

Heat ghee and oil in a pan and add onion chopped and black cumin and fry it. After that mix all ingredients and mix in well. After few minutes add fish. Now add almond paste,green chili paste, raisins paste and milk and  water and cover it.Cook for 10-15 minutes. When it will be thick then it ready .

★ Rui fish Nababi

Ingredients

Fish 6-7 pieces

Onion paste 1/2 cup

Ginger paste 1 teaspoon

Garlic paste 1 teaspoon

Onion chopped fried paste 1 teaspoon

Raisins paste 1 tabspoon

Red chili paste 1 teaspoon

Yogurt 50 gm

2 Tomato cube

Cream 1/2 cup

Sugar and Salt to taste

Oil 1 cup

Ghee 2 tabspoon

Masala powder (cardamom, cinnamon ,cloves, bay leaf) 1 teaspoon

Turmeric powder 1 teaspoon

Method

Mix turmeric powder and salt with fish and keep it 30 minutes.

Heat oil in a pan and fish fry until it brown.

In another pan heat oil and add onion paste and fry it. Then add sugar and raisins paste.When it will be brown then add all ingredients and cook about 4-5 minutes. Now add salt and water.After 3-4 minutes add fish and cover it and cook it until thick. Now remove from heat and add ghee for garnishing.

★Rui Kopta Kari

Ingredients

Fish 8-10 pieces

2 Boiled potato

Onion chopped 1 cup

Green chili chopped 2 tabspoon

Coriander leaves chopped 2 tabspoon

Turmeric powder 1 teaspoon

Chili powder 1 teaspoon

Cumin powder 1 tabspoon

Masala powder (Cardamom, cinnamon, cloves, bay leaf, bell pepper) 1 teaspoon

Ginger paste 1 teaspoon

Garlic paste 1 teaspoon

2 Egg

Breadcrumbs 2 tabspoon

Method

Mix salt and turmeric powder with fish and it will be boiled.

Now mmix all ingredients and make small ball and deep fry .

In another pan add oil and heat it. Then add onion chopped,

2-3 cardamom and fry it until brown. Then add garlic paste and ginger paste and cook for few minutes. Then add water and cook well. Add water and green chili.After few minutes add fried fish ball and 2-3 tabspoon yogurt and sugar. Cover it .

After 4-5 minutes when it will be thick then it ready.

★ Yogurt Rui

Ingredients

Fish 8-10 pieces

Turmeric powder  1 teaspoon

Red chili powder 2 teaspoon

Mustard oil 3 tabspoon

1 Bay leaf

Cinnamon 1 pieces

3-4 Cloves

4-5 Cardamom

Cumin paste 1 tabspoon

Ginger paste 1 teaspoon

Garlic paste 1 teaspoon

Onion paste 1 tabspoon

Yogurt 500 gm

Salt to taste

Method

Mix  1/2  teaspoon turmeric powder, 1/4 red chili powder, salt and 2 teaspoon oil with fish and covered it and keep it 15 minutes for marination.

Yogurt mix with turmeric powder and chili powder and blend well.

Heat oil in a  pan.Fish fried it. Now add bay leaf, cumin, cloves, cardamom, cinnamon. After 1-2 minutes add onion paste and fried until brown, then add ginger & garlic paste. After 1-2 minutes, add water and cook it. Then add yogurt. Cook for 10-15 minutes. Add salt .

When it will thick then add fried fish. Cook for 10 minutes.

Now it ready.

★ Rui Dopeyaja

First mix turmeric powder, chili powder and salt with fish and fry it. Now add  slice onion, little turmeric, salt, chili powder. Cover it.When onion will be soft then remove from heat.

Now it ready.

★ Rui with Mango juice

Ingredients

Green mango slice 1 cup

4 Cloves

Bell pepper powder 1/4 teaspoon

Fried Dry chili powder 1/2  teaspoon

Saffron a little bit

Salt to taste

Method

Green mango mix with salt and take juice.

Mix all ingredients and heat well for juice making.

For Fish

Fish 5-6 pieces

Onion paste 2 tabspoon

Garlic paste 1 tabspoon

Cumin paste 1 teaspoon

Turmeric powder 1/2 teaspoon

Chili powder 1/2 teaspoon

Green chili 3-4 pieces

Salt to taste

Oil as needed

Method

Mix turmeric powder, chili powder and salt with fish and fry it until brown.

3 tabspoon oil put on this pan.Add onion paste and  garlic paste, cumin,turmeric, chili and salt and 1 cup water. After few minutes add fry fish and cook it about 15-20 minutes.

Now ready serving.Add green chili and mango juice for garnishing.

★ Vapa Rui

Ingredients

Fish 8 pieces

Mustard oil 5 tabspoon

Mustard seeds paste 2 tabspoon

Poly seeds paste 2  tabspoon

5 Green chili

Yogurt 3 tabspoon

Sugar 1 teaspoon

Salt to taste

Method

Fish mix turmeric powder and salt and keep 10-15 minutes.

Heat oil in a pan and fish fry it. Mix poly seeds paste,mustard seeds paste,yogurt, salt a little bit, sugar in a bowl. Now all ingredients mix with fried fish. Now put green chili and mustard oil. After that cover it. Now cook it 10-15 minutes on medium heat.

Now it ready and serve with hot rice.

★ Rui with Tomato sauce

Ingredients

Fish  5 pieces

Onion chopped half cup

Cumin paste 1 teaspoon

Ginger paste 1 teaspoon

Garlic paste 1 teaspoon

Coriander powder 1/2 teaspoon

Turmeric powder 1/2 teaspoon

Salt to taste

Red chili powder 1/2 teaspoon

4-5 Green chili

Tomato sauce 4 tabspoon

Method

Mix salt and turmeric powder with fish and fry it.

Heat oil in a pan. Add onion chopped and fry until brown. Now add all ingredients except tomato sauce. Now cook it about 2-3 minutes. Then add fried fish and some water. Add green chili.

When it will be thick then it ready to serve. Used tomato slice and coriander leaves chopped for garnishing.
