Ilish Recipe on Bengali Dish

Ilish or Hilsha fish is the national fish of Bangladesh. Not only Bangladesh but also it is most popular and favorite fish in the world.It has various nutritional elements. See fish category.

It cooks in various ways. Here is some delicious Ilish  recipe.

★ Coconut Ilish

Ingredients

Ilish fish 8 pieces

Coconut milk 2 cup

Yogurt 4 teaspoon

Ginger paste 2 teaspoon

Cumin paste 2 teaspoon

Onion chopped 1 cup

Sugar 1 teaspoon

Chili powder 1 teaspoon

Salt to taste

Oil 4 3 tabspoon

Method

At first fish ,yogurt, ginger paste, cumin paste, chili powder, sugar and salt mix one by one and keep it 1 hour. Now heat oil in a pan and fried onion chopped until it brown then add coconut milk. Now cooked it medium heat for 8-10 minutes.

Now it ready for Steve.

★ Doi Ilish/Yogurt Ilish

Ingredients 

Ilish fish 6 pieces

Yogurt 1/2 cup

Fried onion chopped 1 cup

Coriander powder 1 teaspoon

Chili powder 1/2 teaspoon

Raisins paste 1 tabspoon

Sugar and Salt to taste

Oil 5 tabspoon

Method

At first mix all ingredients with fish and take aside (about 20 minutes).

Now heat oil in a pan and add fried onion paste and then fried it about 2-3 minutes. Then add fish. After 2 or 3 minutes add 1/2 cup water.Now cook it medium heat for 10-15 minutes. Now it remove from heat and mix rest fried onion for garnishing.

★ Bhapa Ilish:

Ingredients

Ilish fish 4 pieces

Mustard seeds 1 tabspoon

Yogurt 1 teaspoon

Fresh coconut (grated) 1 tabspoon

Green chili 1 or 2

Turmeric powder 1 teaspoon

Mustard oil 1 tabspoon

Coriander leaves chopped 1 teaspoon

Method

Firstly grind the mustard seeds with the green chilies and turmeric powder to a smooth paste and keep aside. Now mix the fish with all ingredients. Put this mixture into a pan. Pour little water at the bottom of a pressure cooker.Place this pan in it and close the pressure cooker without the vent.

Now heat for 10 minutes on high flame and then for 4 to 5 minutes on low flame.

Now it ready.

★ Ilish Makhani

Ingredients

Ilish fish 8 pieces

Yogurt 2 tabspoon

1 Tomato finely chopped

Onion paste 2 tabspoon

4 Small garlic paste

Turmeric powder 1 teaspoon

Mustard seeds paste 1 tabspoon

Chili powder 2 teaspoon

Mustard oil 4 tabspoon

Salt to taste

Method

At first marinate fish pieces with half teaspoon of salt,turmeric powder for 25 to 30 minutes then fry it until brown. Then take out and keep aside. Then rest of the oil ,add onion, garlic paste and fry it 4-5 minutes. Then add tomato and sugar and fry until tomatoes cooked.

Now add yogurt grated mustard seeds, turmeric powder, chili powder and salt and then mix well and fry well until there is no raw masala flavor. Add 1 or half cup warm water when water is boiling add the fishes and cook for few minutes.

Now it ready.

★ Ilish Korma

Ingredients

Ilish/Hilsha fish 8 pieces

Onion paste 1/2 cup

Ginger paste 1 teaspoon

Garlic paste 2 tabspoon

Coriander paste paste 1 teaspoon

Cardamom 4  pieces

Cinnamon 1-2 pieces

Green chili 4 pieces

Ghee 3 tabspoon

Sugar 1 tabspoon

Lemon juice 1 tabspoon

Kewra 2 tabspoon

Yogurt 1/2 cup

Method

Except green chili and kewra, add all ingredients and mix well. Now it cook covered in low heat.Turn over the fish once.When the water has almost evaporated, add the green chili and the kewra. Then it cook for another half an hour in low heat. When the oil begins to float on top then it ready.

★ Shorshe Ilish/Mustard Ilish

Ingredients

Ilish fish 8 pieces

Ground mustard paste 1 tabspoon

Green chilis 5 pieces

Turmeric powder 1 teaspoon

1 Onion diced

Mustard oil 2 tabspoon

Salt to taste

Method

At first some salt and turmeric powder on the fish steaks and set aside. Then use whole mustard seeds, ground them into a paste along with the green chili and a tabspoon of water.

Now heat the oil in a flat bottomed pan.Then saute the onions until light brown and the mustard paste and rest of the spices and fry 3-4 minutes.

Now add 2 or 3 tabspoon water,making sure you scrape any species that are stuck to the bottom of the pan. Then add the fish and cook medium heat for about 10 minutes. Finally flip over the fish and cook covered another 5 minutes until excess water has evaporated.

★ Ilish Rejala:

Ingredients

Ilish fish 8/9 pieces

Onion paste 4 tabspoon

Garlic paste 2 teaspoon

Milk 3 cup

Cumin paste 1teaspoon

Coriander powder 1 teaspoon

Green chili 2 pieces

Salt and Oil to taste

Method

At first fish mix with small salt and fry on medium heat.

Heat oil in a pan.Now add all ingredients without salt .Mix well and fry 2-3 minutes, then add fish and mix a little water and covered it for few minutes. When gravy is thick then add milk and cook it 3-4 minutes. Now add green chili for its garnishing.

★ Orange Ilish

Ingredients

Ilish fish 8 pieces

Orange juice 2 cup

Onion paste 2 tabspoon

Sugar 1 teaspoon

Red chili powder 1/2 teaspoon

Turmeric powder 1/2 teaspoon

Salt to taste

Oil to taste

Orange pickle grated 1 tabspoon

Method

At first fish mix with salt & little turmeric powder and keep aside for 15 minutes.

Heat oil in as pan.Then fish fry on medium heat until it brown and fish remove from heat oil.Now add all ingredients and make it gravy. Then add fry fish.Add orange juice and orange pickle grated. Now cook it on medium heat about 10-15 minutes. Then it ready.

★ Lemon Ilish

Ingredients

Ilish fish 8 pieces

Onion paste 2 cup

Turmeric powder 1 teaspoon

Green chili slice 5-6 pieces

Lemon juice 3 tabspoon

Lemon pickle grated 1 tabspoon

Ginger paste 1 teaspoon

Salt to taste

Oil 1/2 cup

Method

Mix all ingredients without lemon pickle grated and take it 30 minutes. After then heat oil in a pan and put it marinated fish.After 6-7 minutes takes opposition part of fish and covered it. When it will be thick then add lemon pickle grated and covered it. Cook 2-3 minutes.

Now it ready.

★ Posto Ilish

Ingredients

Ilish fish 6 pieces

Coconut paste 4 tabspoon

Popy seeds paste 2 tabspoon

Green chili 4 pieces

Black cumin 1 teaspoon

Turmeric powder 1 tabspoon

Mustard oil 1 cup

Hot water 1 cup

Salt to taste

Method

At first fish mix with salt and turmeric powder. Make a paste mix with coconut paste and poly seeds.

Heat oil in a pan and fry fish on medium heat until it brown. Then add black cumin,green chili,coconut-popy seeds paste mix well until thick. Then add hot water.After 2-3 minutes, add fish and cook it 4-5 minutes.

Then it ready.

★ Garlic Ilish

Ingredients

Ilish fish 8 pieces

Ginger paste 1 teaspoon

Cumin paste 1 teaspoon

Turmeric powder 1/2 teaspoon

Dry chili powder 1/2 teaspoon

Garlic paste 1/2 teaspoon

Onion paste 2 tabspoon

Green chili 4 pieces

Garlic slice 5-6 pieces

Pea 1/2 cup

Coriander leaves chopped 2 tabspoon

Salt and oil to taste

Method

Heat oil in a pan and fry fish on medium heat. After that mix all ingredients except coriander leaves and mix well.Add salt and little water. Add fry fish.Cook it 10-12 minutes. Then add green chili,when it will be thick then add coriander leaves chopped. Now cook 2 minutes.
