Chicken Recipe -Bengali Dish

Chicken almost one of the most favorite dish in everyone. Every  countries has own cooking method. Here is some Bengali Recipe.

★ Chicken cheese ball

Basically it is Indian cuisine dish but favorite in Indian subcontinent.

Ingredients

Chicken cooked and shredded 2 cup

Cheese greated 2 cup

Coriander leaves chopped (finely) 3 tabspoon

Breadcrumbs 2 cup

All purpose flour 5-6 tabspoon

Oregano 1 teaspoon

Chili flakes 2 teaspoon

Salt to taste

Oil for deep frying

Method

Take all ingredients except breadcrumbs in a bowl and mix well to from soft dough. Now it shapes into balls.

Now take 2 tabspoon flour in a bowl and return 2 tabspoon flour in an another bowl.Then add some water to one and make it into a thin paste.

Now take breadcrumbs in another bowl.Then take balls ones by one and roll it ready to flour and finally coat with breadcrumbs.

Now deep fry until it golden.

★ Chicken fried recipe

Ingredients

Chicken 500 gm

Tomato paste 2 tabspoon

Onion finely chopped 1 cup

Ginger paste 1 tabspoon

Garlic paste 1 tabspoon

Turmeric powder 1 teaspoon

Chili powder 1 teaspoon

Mixture powder (Cardamom, cinnamon, cloves) 1 teaspoon

Salt and Oil to taste

Method

All ingredients mix well with chicken without onion, tomato paste,cardamom, cinnamon and cloves and keep it for 2 hours.

Heat oil in a pan and add onion chopped and fry well.Then add tomato paste and cook for 2-3 minutes. Now add marinated chicken and cookon high heat for 4-5 minutes. When water will leave then continue cooking for 5-6 minutes for medium heat and cover it.After that cook for 15-16 minutes. When it will be dry then add mixture powder and covered for 4-5 minutes on loiw heat.

Now it ready.

★ Chicken Keema

Ingredients

Boneless chicken minced 1 and 1/2 kg

Oil 1 tabspoon

1 Bay leaf

Green Cardamom 4-5 pieces

Cumin 2 teaspoon

Onion chopped 1 cup

Ginger chopped 1 tabspoon

Butter 2 tabspoon ( 1 for cooking and another is garnishing)

Capsicum chopped 1/2 cup

Turmeric powder 1 and 1/2 teaspoon

Cumin powder 2 teaspoon

Milk 2 tabspooon

Tomato pureed 1 cup

Sugar 1-2teaspoon

Lemon juice 1 teaspoon

Water and Salt to taste

Coriander leaves chopped 1 tabspoon

Method

At first add oil in a pan.Then add bay leaf ,green cardamom, cumin and cloves and let them release the aroma.Now add chopped onion. Saute till golden brown then remove the bay leaf .Now add garlic, ginger,butter and saute.

Then add green chilies and capsicum. Saute till the capsicum for about 4-5 minutes. Add some water.Then add all ingredients such as turmeric powder, red chili powder, cumin powder, coriander powder, salt and saute.Now add chicken and saute for 4-5 minutes and then add milk and mix well.

Now add tomato pureed, sugar and lemon juice and cook 12-15 minutes on medium heat. Add water.Cover it and cook till the water evaporates and the chicken is well.Finally garnish with coriander leaves, spilt chili and butter.

★ Buna Chicken

Ingredients

Chicken 500 gm

Onion chopped 4 tabspoon

Tomato chopped 1 cup

Cashewnuts paste 1 tabspoon

Garlic paste 1 tabspoon

Ginger paste 1 tabspoon

2 Green chili (finely chopped)

Red chili powder 1/2 teaspoon

Coriander powder 1 teaspoon

Lemon juice 2 teaspoon

Garam masala powder 1 teaspoon

Cumin seeds 1/2 teaspoon

Green cardamom 2 pieces

Star aniseed 1

Cloves 2-3 pieces

Ghee 2 tabspoon

Salt to taste

A pince of red food color

Method

Chicken pieces, salt and lemon juice mix well and keep aside with cover.

Melt the ghee in a pan and add bay leaf ,clove,cumin seeds,cardamom and aniseed. Saute together for 1 minutes and add finely chopped onion and keep stirring. Add green chili,ginger and garlic and continue saute till oil begins to separate. Then add fine chopped tomatoes, salt and spices.Now reduce the flame and cover the pan for 2 minutes. Now uncover and keep stirring until the onion tomato mixture softened and seems like a bhuna paste.After few minutes of cooking on low heat.

Now add 2 of  cup water, cover the pan,simmer the flame and leave to cook until chicken is well. In between put a drop of food colour mix very well by adding dried fenugreek as well.After 10 minutes mix the cashewnuts paste very well in chicken pieces and finally garnish with fine chopped coriander leaves.

★ Teekha Chicken

1 kg chicken leg cubes

Mustard oil 100 ml

Onion seeds 1 teaspoon

Fennel seeds 1 teaspoon

Garlic paste 2 tabspoon

Onion chopped 3 cup

Tomato chopped 150 gm

Ginger paste 1 teaspoon

Green chili 2-4 pieces

Curry leaves 2 tabspoon

Tomato paste 1 tabspoon

Red chili powder 1 tabspoon

Black pepper crushed 1 teaspoon

Cumin paste 1 teaspoon

Fresh coriander 20 gm

Mint 10gm

Salt to taste

Black salt 1 pinch

Method

At first heat mustard oil and add fennel seeds and onion seeds.When they release flavor add garlic paste. Saute for a while.Now add the chopped onion, tomato, ginger paste and green chilies. Stir fry until the onion turns brownish. Then fry curry leaves and crush them.

After that add chicken cubes,tomato paste and stir for a while .Now add cardamom, cinnamon and cloves and other ingredients and mix well.Cook on a medium heat. Finally add the crushed curry leaves and mix well and serve the dish garnished with fresh coriander and mint.

★ Dry Pepper Chicken

Ingredients

Chicken 500 gm

Green chili 2 pieces

Ginger with garlic paste 2 tabspoon

Turmeric powder 1 teaspoon

Coriander powder 2 tabspoon

Ground pepper 2 tabspoon

Lemon juice 1 teaspoon

Garam masala powder 2 teaspoon

Salt to taste

Coriander leaves 1 tabspoon

Curry leaves 1 spring

Method

At first heat oil in a pan and add in fennel seeds and let them crackle. Then add onion, curry leaves and green chili and saute for 5 to 10 minutes until it light brown. Now add ginger paste and saute for a minute. Then add in all the spice powders and salt and mix it well.Now add chicken and mix well. Cover it and cook 30 to 40 minutes till the chicken is cooked.After that remove the cover the cover and cook a high heat and let the masala gets dry.Now add ground pepper and mix well.Finally add lemon juice and coriander leaves and mix well and it is ready to serve.

★ Chili Chicken

Ingredients

500 gm Chicken

1 Bell pepper

1 onion sliced

Pepper powder 1/2 teaspoon

15 Caswnuts

Oil 1 tabspoon

Soya Sauce 1 tabspoon

Chili & garlic paste 1 tabspoon

1 Celery Onion

1 spring onion

1 egg

Sugar 1/2 teaspoon

Corn strach 1 tabspoon

Salt to taste

Method

At first chicken, cornflower, egg mix in a bowl. Add pepper and then mix again. Now it deep fry and keep aside. In another pan add little oil,dry red chilies, ginger paste and garlic paste and mix it well and then caswnuts onion, bell pepper cubes,celery,spring onion, chili powder, pepper, soya sauce and chili garlic paste mix well.Then add sugar,salt .Add little water bring it as boil and then add chicken mix well .Finally add the cornflower mixed in water and cook for few minutes.

Now it ready.

★ Spicy Chicken

Ingredients

Skinless and boneless chicken breast 8 pieces

Garlic paste 3 tabspoon

Onion paste 2 tabspoon

Dried thyme 2 tabspoon

Ground cayenne pepper 2 tabspoon

Ground black pepper 2 tabspoon

Paprika 3 tabspoon

Salt to taste

Method

At first in a bowl, mix together the paprika, garlic paste, onion paste, thyme,cayenne pepper, ground black pepper and salt.Set aside about 4 tabspoon of this seasoning (seasoning for fish or vegetables) mixture for the chicken.

Now preheat grill for medium heat. Then rub some of the reserved 4 tabspoon of seasoning on to both sides of the chicken breasts.

Lightly oil the grill grate.Place chicken on the grill and cook 10-12 minutes.

Then it ready.

★ Lime chicken

Ingredients

Chicken things 4 bone

Olive oil

Chopped cilantro 1/4

Juice of 2 lime

Crushed red pepper flakes

2 Cloves and garlic, minced

Cumin 1/2 teaspoon

Method

First make marinated, whisk together 2 tabspoon olive oil,cilantro,lime juice, red pepper flakes,garlic and cumin.Then add chicken and toss to evenly coat with the marinade. Now cover it and refrigerator for 30 minutes. When it ready for cook then preheat oven to 425°F.

Now pour olive oil into a large oven proof skillet to cover the bottom of the pan.Heat over medium heat. Season both sides of marinated chicken with salt and pepper.Then add chicken skin side down and pour in the marinade. Sear until the skin becomes golden and crispy. Flip the chicken things and cook for 2 or 3 minutes more.Turn off the heat and transfer pan into hot oven and bake it 12 to 15 minutes.
