Make Pitha in Bangladeshi way

Pitha ,it is a common word .Basically it means cake.Bangladesh has a good source of Pitha.People make this in various occasions. Actually it is the most attractive food for everyone. Even officially organized Pitha utshob.Here is some Bangladeshi Pitha recipe.

★ Malpoa Pitha

Ingredients

Dates juice 1 litre

Flour 250 gm

Dense milk 1 cup

Soda a little amount

Anise 1/2 teaspoon

Salt to taste

Ghee 250 gm

Method

First dates juice cook on stove and make it thick.Mix flour,milk, anise,soda,salt and water and make a thickly round shape.

Heat ghee in a pan and put on this round shape and fry it until brown. Now put on dates juice and serve.

★ Red Poapitha

Ingredients

Rice powder 3 cup

Coconut paste 1/2 cup

Flour 1 tabspoon

Baking powder 1/2 teaspoon

Molasses to taste

Water as needed

2 Egg

Salt to taste

Oil 3  cup

Method

Except oil, all ingredients mix and take it 30 minutes.

Now heat oil in a pan. Then take  2 tabspoon mixture and put on oil.

Now fried one by one.

★ Hatkoli with Milk

Ingredients

Dense milk 2 cup

Coconut 1 cup

Molasses 1 cup

Water 1 cup

Almond ,raisins as needed

Rice powder 2 cup

Cardamom powder 1/4 teaspoon

Method

Boiled rice powder and make small  bread. Make hole in every bread and put pour on this and after the hole make off.But remember that after putting pour and off this mouth carefully, otherwise it will be damaged.

Now heat water and molasses in a pan and add Pitha .Cook 8-10 minutes.

Now add dense milk and cook 2-3 minutes.

Add almond and raisins for garnishing.

★ Nakshi Pakan Pitha

Ingredients

Almond rice powder 2 cups

Mung bean flour

Milk 1 cup

Water 1 cup

Ghee 1 tabspoon

Sugar 1 cup

Besides, for the design, date Thom’s and toothpicks are needed.

Method

Boiling water mixed with milk.When it is brown, apply a little salt rice powder and stop the oven and cover it for a few minutes. Put the bud in the pulse and roast it.Pour rice powder well,with pulse and ghee with moth.Cut the bread into a sack of bread.Prepare the dates and design of dried oil in medium heat and fry the medium. Take out the fried cottage cheese.

★ Mora Pitha of Coconut 

Ingredients

Rice powder 3 cup

Coconut 1 cup

Salt to taste

Method

Burn it with molasses like water in two and a half cups.If you are stirring with rice powder, coconut. Put down a few minutes from the oven.Take a math well,make a round of round balls with a palm of the ball like a small ball.Leaves for 15-20 minutes in the  gap.Serve after cooling.

★ Rose Pitha/Cake

Ingredients

Flour 2 cups

Liquid milk 2 cups

Sugar 1 cup

Water 1 cup

Method

When the milk grows,pour the flour and make the Doug.

Meke ceramic with sugar and water.Cut the small three breads and make a rose with folding .Take the cottage cheese with sour cream.

★ Kashmiri Powder Bread

Ingredients

Almond rice powder 2 cup

Polao rice powder 1 cup

Liquid milk 1 cup

Patty molasses 1 cup

Mawa 3 tabspoon

Pistachial 2 tabspoon

Cashew nuts 2 tabspoon

Raisins 3 tabspoon

Kalasham 2 tabspoon

Salt to taste

Method

Keep a little salt and milk with rice powder for several hours. Take it with the appliance. Powder on low flame with little rice powder, add almonds, raisins, powder mawa and then again on top of rice powder, make paste in the flour paste.Serve hot.

★ Cuddle of the heart

Ingredients

Flour 1 cup

Liquid milk 1/2 cup

Rice powder 2 tabspoon

Salt to taste

Molasses one and half cup

Method

When the milk grows,take a little salt,rice powder and flour and take it down.Makes a thin bread in the moth well.Crush it. Now insert the middle part of the fold and turn it on the other two sides.Squeeze the oil into the frying fan,stirring it with coconut.

★ Milk palm in the Date palm

Ingredients

Almond rice powder 1and  half cup

Rice powder 2 tabspoon

Milk 1 littre.

Molasses 1cup

Salt to taste

Corned coconut 1/2 tabspoon

Ghe 1 tabspoon

Water 2 cups

Besides the comb will take 2

Method

Boiling water with a little salt.When the water starts boiling, take the rice powder and boil it after boiling. Mix well enough to make small balls.Garnish with two combination and make cakes in the form of mussels.Keep the cakes wet.Put the coconut, cottage cheese and molasses in the other containners and take them out of the oven for a few minutes.

Serve after cooling.

★ Clown Latika

Ingredients

Oil 1 and 1/2 cup

Cloves 10-12

Sugar 1 cup

Ghee 2 tabspoon

Molasses half cup

Coconut half cup

Salt to taste

Cinnapiece 1 piece

Method

Make a small amount of salt and oil to make the dough.

Wash the juice in small pieces. Take the cinnamon and fry the cinnamon. Take off the juice with sugar or molasses, curry coconut. Make small bread in it and put it inside the suji premi and fold it with cloves.

Fry oil .Serve hot or cold.

★ Petal lick (Puchka)

Puchka, is one of the most popular street food in Bangladesh.

Ingredients

Flour 1 cup

Ghee 2-3 tabspoon

Black pepper 1 teaspoon

Salt to taste

3-4 dates of water

1 and 1/2 cup water

Tamarind powder 1 cup

Turmeric powder 1 tabspoon

Cumin powder 1 teaspoon

Ginger chopped half teaspoon

Salt to taste

Method

For petals: 15-20 petals,2 cups special sour,2 boiled potatoes cut into small cubes,2 onion cooked,semi-cups boiled, chopped dried yogurt, cumin seeds, chili powder. If need coriander leaves chopped as desired. Preparation of petals ,mix well with black pepper, ghee and salt in the flour.Now make the dough with water as needed. Cut into thin big bread sails with small rounds.20-25 petals. Sprinkle the thorn spoon so that petals do not swell.

Make the sour

Keep 1 cup coconut water in the stove and keep it burning with 1 cup of tamarind. Then stir the mixture until it becomes soft with dates.Then make a dense mix of it with all the ingredients cool down .

Make Petal chut

Mix all the ingredients in a large bowl,shredded curd,petals and 1 cup of sugar.Sprinkle one spoon of potato on one side of the petal,stirring it with the dough and sprinkle onion, coriander leaves chopped.

Now serve it.

★ Coconut nuts

Ingredients

1 coconut

1 cup sugar

Ghee 1 teaspoon

Salt to taste

Method

Put a large floor of the gas stove on the coconut chopped. Then pour the coconut in a pan and grind one tabspoon of sugar and the date flakes together with light. Keep stirring until the date flakes or melt.This time the most important of the time until the coconut becomes glued.Lower the mix and turn your palms into small marbles. Take a little ghee in your hand while making marble. Then serve in air tight containers delicious coconut nuts.

★ Patisapta Pitha

Ingredients

Refined flour 1 cup

Half cup semolina

Rice powder 1/4 cup

Milk & oil

Purified

3 cup coconut cora, 1 cup liquid milk,sugar 2 tabspoon cardamom 3-4

Preparation of Patisapta

Take a bowl of flour ,rice powder and semolina. Now milk inside it. Because there is no swelling or spell in the mix.Put the mixture in 30 minutes. Then the oil in hot a nonstick pan is very little. Oil spread around it .

Now fill it properly and make it fit.Wait until the light brown color. Then serve cold or hot .

★ Patisapta with Milk & Jafran

For rubbing

2 cups of milk

Double cream for 1 cup

Sugar 1/2 cup

Saffron 1 pinch

1 tabspoon rice powder or cornflower

The milk should be very dense.When stirred, keep stirring with sugar cream and saffron. To stir until it is slaughtered. Otherwise it will fall on the bottom of the plate.When the milk is very thick,rice or cornflower will take a little water and mix it with milk.When the deterioration becomes dense,it should be cooled down.

Powder: 1 cup rice powder, flour 1 cup, sugar can also be mixed with 1 cup or taste ,1 cup of water.

Melt water in the oven by mixing it with molasses. If the molasses are cooled, add rice powder and flour to cover for one hour.Then spread a pan with a small spoon of spoon in a pan spreading pan and spread it with pan.In the middle of the heat,take one and a half teaspoon of dried Pitha in the middle.

Note

Firing will not be too dense or thin.Never mix flour and rice powder with hot molasses. So cool and then mix.Mix rice powder and flour together in the batter.Only after the rice powder becomes cold,after breaking the rice .It is broken from the middle.

★ Vegetables Patisapta

Ingredients

Flour 1 cup

Semolina 1/2 cup

2 Egg

1 Carrot chopped

Cabbage 1/2 cup

1 onion chopped

Green chili chopped 3/4

Soya sauce 2 tabspoon

Salt to taste

Oil as needed

Coriander leaves chopped 2 tabspoon

Method

Same as Patisapta & Jafrani Rishi Patisapta

Make pour

Heat oil in a pan and add onion, green chili chopped and fry it until brown. Add vegetables chopped and salt.Cook for 5 minutes. Add egg  and mix well.Add soya sauce. After that add coriander leaves chopped. Now it ready for pour.

★ Palang Puri

Ingredients

1 cup of curry leaf spinach

1 cup of flour

Sugar 1 teaspoon

Lemon juice 2 teaspoon

Salt to taste

1 tabspoon oil

Oil food deep fry

Method

Sprinkle the pulp and take it after cutting it.Now add 1 cup of flour to sugar ,salt and oil.Then mix with pulse spinach and lemon juice. Mix the flour with yeast and mix it with the remaining flour.

Take yeast and keep it for 12 hours by 12 seconds.Each share will have 8 cm diameter bread . Pour oil will be heated in the pot and it will be puffed with oil.When the swelling ,after a few seconds,oil spoon and serve hot chili with chutney.

★ Vapa Puli

Ingredients

Rice powder half kilograms

Flour 3 tabspoon

Water as needed

Salt to taste

Coconut coated one and a half cup

Jaggery powder one and a half cup

Half cup of white sesame seeds

Oil/ghee 2 tabspoon

Method

Make coconut,molasses and sesame seeds together with fuels.Let cool be cool.Now give the amount of water to the stove so much water.Give salt. When it is blended,cover 2 tabspoon of ghee and keep aside for a few minutes with rice powder and flour.Take the moth down and get better.

Cover the side with a lid like a loincloth and fill it in the sack.Once the water in the pot is bolled,bamboo chapati steam and apply.Steam can also be steamer.When you’re done ,put them in the serving containers.

★ Chitoi Pitha

Ingredients

Rice powder 2 cup

Water as needed

Salt to taste

Method

Mix rice powder and water and make dough.But remember it ,that mixture is not very thin and thicker.

Then need a pan that is made from soil.

Now heat this pan and add a little oil. Now put 2 tabspoon mixture on it and cover it .After 2-3 minutes it will be ready. It is so much testy with various vegetable mashed or bhuna meat.

★ Vhapa Pitha

Ingredients

Boiled rice powder 2 cup

Molasses 1 cup

Coconut chopped 1 cup

Salt to taste

Method

First mix rice powder and salt with water and make it neat. But remember that, it dose not strain.Take water in a pan and it cover with two holes and make the pan and the cover will be fit.

Now heat water on high heat. Take two pieces clothes (thin) and two small bowl.Take the mixture on a bowl and make a hole in middle and put on that molasses and coconut. Again put rice powder.

Now hole bowl cover with a piece of clothes and put opposition part on this pan.Now recover this clothes very carefully. Now cook for 3-4 minutes, when it will be boiled then it  ready to serve.

★ Vegetables spicy vhapa Pitha

Ingredients

Rice powder 4 cup

Coriander leaves chopped 1 cup

Onion chopped 1 cup

Green chili chopped 1 tabspoon

Carrot chopped 2 cup

Salt to taste

Method

Same rules as vhapa Pitha. Here is mix rice powder and salt. And pour making by coriander leaves chopped, green chili chopped

★ Milkchitoi

Ingredients

Rice powder 2 cup

Water and salt to taste

Milk 1 litter

Molasses 2 cup

Method

Mix water with rice powder and make dough but remember it don’t get very thin and thicker.

Now take a pan that made from soil. Put it a very little oil and heat the pan.Take 2 tabspoon dough and cover the pan .After 2-3 minutes remove from pan .

Now heat milk and make it thick. Make syrup in another pan mix molasses and water.

Now Pitha put on syrup and cook 3-4 minutes. Now remove from heat and cool it.Now add milk.

After sometimes it will be ready.

★ Boiled/Siddho Puli Pitha

Ingredients

Rice powder 4 cup

Molasses as needed

Salt to taste

Coconut chopped 2 cup

Method

Rice powder fry on low heat in a pan and add water .Make it thick.

Make pour with molasses and coconut in a pan.When it will bed dry then remove from heat.

Now make bread from the thick dough and put it pour.Cut the bread in a half moon sized and off this mouth.

Now heat water in a pan and all Pitha boiled on vapour. When it will be boiled now it ready.

★ Milk Puli

Ingredients

Rice powder 500 gm

Milk 2 litre

Molasses 2 cup

Coconut chopped 2 cup

Method

Milk and molasses mix together and heat in a pan on medium heat. Make it thick.Now mix coconut and molasses and cook it until thick and make pour.

In another pan boiled rice powder and make small round shape or small roti and put it pour in the middle.

Now this Puli take into milk and cook a little time.

Now serve it.
