Here’s some Beef khichuri collection from Bengali cuisine.

1. Beef Khichuri

Ingredients:

Beef 500 gm
Ginger paste 1 tabspoon
Rice 2 cups
Garlic paste 1 teaspoon
Mung pulse ½ cup
Lentil pulse ½cup
Onion paste 1 tabspoon
Coriander seeds paste 1 teaspoon
2 Cardamom
Water 6 cups
Cinnamon 2-3
Cloves 2-3
Salt to taste

Method:

Wash the rice and pulses and keep it for half an hour for water drop out.
Mix all other ingredients (except oil) with beef.
Heat the oil in a pan and add the marinated beef. Cook for about 15-20 minutes, then add 1 cup of water and wait until boiled.

Now take out the beef from spices and keep aside.
Now add rice and pulses on this spices and should be covered with 6 cups of water.
When drain the water and then add green chilli slices and cooked beef.
Now serve with salad and chutney.

 

2. Beef Khichuri-2

Materials :

Beef 1 kg
Ginger paste 1 tablespoon
Polao rice 4 cups
Garlic paste 2 teaspoons
Mung pulse 1 cup
Lentil pulse 1 cup
Onion paste 4 tablespoons
Hot spicy masala powder(cardamom, cinnamon, cloves,nutmeg) 2 tablespoon
Coriander powder 1 teaspoon
4 Cardamom
10 cups of water
4-5 Cinnamon
6-7 Green chili
Salt to taste
Oil as needed

Method:

Wash rice and pulses and soak for half an hour.
Mix all other ingredients except oil with beef.

Heat the oil in a pan and add the marinated beef. Cook well about 10-12 minutes. Then add 3-4 cups of hot water.
When the beef completely boiled then it remove from the pan and keep aside.
Now add the rice and pulse in this oil. Frying until brown. Then add 7-8 cups of water. When it will be dry then add cooked beef and green chili.
Keep on low flame about 7-8 minutes.
Add coriander leaves chopped for garnishing.
After that serve with salad and chutney.

3. Beef khichuri (Soft)

Ingredients :

Rice 2 cups
Mung bean (fried) 1 cup
Beef 1 kg
Ginger paste 1 and ½ tablespoon
Garlic paste 1 tablespoon
Onion chopped 1 cup
Turmeric powder 1 teaspoon
Chili powder 1 teaspoon
Cumin powder 1 teaspoon
Hot spicy masala (cardamom, cinnamon, clove,nutmeg,bay leaf) powder 1 teaspoon
2 Cardamom
Cinnamon 2-3
Bay leaf  2-3
2 Clove
Oil ½ cup
Salt to taste
Water 9-10 cup
7-8 Green chili

Method:

At first wash the rice and pulses and keep soak for half an hour and then keep aside for water drop out.

At the same time wash the beef and keep for water down. Then mix all ingredients except hot spicy masala powder and green chili with the beef. Keep aside.

Now heat oil in a pan and add cardamom, cinnamon, clove and then onion chopped. Now add the beef. Cook for 15-20 minutes or until boiled.
Now add the rice and pulses and fry with the beef. It’s maybe 5-6 minutes.
Now add 9-10 cups of water and cook on medium heat.
When it will be soft then add green chili and hot spicy masala powder and cook for 4-5 minutes on low flame. After that serve with salad.
